Understanding Peruvian Pisco
Peruvian pisco is made from designated grapes and rests without wood influence. Puro uses one variety, acholado brings components together, and mosto verde is distilled before fermentation is complete. Aromatic and non-aromatic varieties create different expressions; mosto verde does not mean a sugary finished spirit. Compare the named grape as carefully as the style.
