Understanding Grappa
Grappa is distilled from grape pomace: the skins and other solids left by winemaking. Fresh pomace and careful distillation are central to its quality. Bottles may be unaged, showing grape and floral detail, or matured in wood for a rounder, spicier profile. A grape name is a useful starting point, but production and storage of the pomace also matter.
