Understanding Marc & Pomace Brandy
Pomace spirits use the grape material left after pressing. France's marc, Iberian orujo and bagaceira, Georgian chacha and Greek tsipouro belong to this broad conversation, alongside Italian grappa. Regional rules and methods differ; some are wood-aged, and some local styles are flavoured. They should not be confused with spirits distilled from wine alone.
