Understanding Fruit Eau-de-vie
Fruit eau-de-vie is a broad expression for fruit spirits, often unaged and dry despite an intensely fruity aroma. Fermentation and distillation create the spirit; it is different from a sweet fruit liqueur. Poire Williams, apricot and raspberry spirits illustrate how much the raw material can change the glass. Check the production method, since macerated-and-redistilled fruit spirits also exist.
