Understanding Kirsch
Kirsch, or Kirschwasser, is a cherry spirit rather than a red, sweet cherry liqueur. The character can suggest fresh cherry, blossom and almond-like kernel aromas without tasting sugary. Unaged examples keep the fruit in focus. Producer and cherry variety can be more informative than packaging or an assumption that clear spirits lack complexity.
