Understanding Assyrtiko
Assyrtiko is strongly associated with Santorini but also grows on the Greek mainland and elsewhere. Dry versions can retain firm acidity even with substantial ripeness and body. Oak and lees ageing create different textures, while sweet styles also exist. Treat the island name and grape name as related but distinct information.
