Malbec is closely associated with Argentina, while Cahors provides another important reference. Site, altitude and cellar choices can shift the wine from bright and floral to dense and firm. Deep colour is only the beginning: look for freshness and length alongside plum, blackberry and a sometimes cocoa-like finish.
