Pedro Ximénez, often shortened to PX, is both a grape name and a reference to this richly sweet sherry style. Grapes are dried in the sun to concentrate their sugars; fermentation is arrested with wine spirit and oxidative ageing adds depth. This is a specific sweet expression within sherry's much broader range. Expect a different experience from dry Fino or Amontillado.
